Living // Pumpkin Chocolate Chip Cookies recipe

Thanksgiving may be over but holidays are still fast approaching. Need a quick and easy cookie recipe for your office holiday party or your parents' get together? Use some of the leftover pumpkin you bought for Thanksgiving pies to make pumpkin chocolate chip cookies.

Ingredients:
2.5 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
0.5 teaspoon salt
1 teaspoon ground cinnamon
0.5 teaspoon nutmeg
0.5 cups butter or margarine softened
1.5 cups granulated sugar
1 cup Libby's solid pack pumpkin
1 egg
1 teaspoon vanilla extract
2 cups chocolate chips

Directions:
Preheat the oven to 350 degrees.

In medium bowl, combine flour, baking powder, baking soda, salt, cinnamon and nutmeg; set aside.

In large bowl, cream butter and sugar. Add pumpkin, egg, vanilla and beat until light and creamy. Add dry ingredients and mix well.

Drop by rounded tablespoon onto greased cookie sheets. Smooth tops of cookies.

Bake in preheated 350 degree oven for 15 to 20 minutes or until lightly brown. cool on wire racks.
